Lets Eat!

For Christmas, Andy's sister MacKenzie made Andy and I aprons...and sent us the Weight Watchers cookbook that I have been wanting. I told mom about these awesome sandwiches that Andy and I loved! So I thought I would share with everyone!


Turkey Reuben Sandwiches

4 slices rye bread (we got Jewish rye, its usually cheaper and is lighter in color)
4 teaspoons prepared mustard
4 tablespoons fat-free Thousand Island dressing
6 tablespoons sauerkraut, drained (we didn't use this on ours, so its optional)
6 oz deli sliced turkey breast
2 slices reduced-fat Swiss cheese

(1) Preheat the oven to 400 degrees F.

(2) Spread one side of each slice of bread with 1 teaspoon of mustard and 1 tablespoon of the Thousand Island dressing. Top with sauerkraut, turkey and Swiss cheese.

(3) Place the sandwiches on a baking sheet or toaster oven tray and bake until the cheese melts and the sandwiches are hot, about 6 minutes.


MMMM Who said eating right was no fun!! Don't they look yummy?
